WHAT IS OPTIMUM
OPTIMUM is the first Personal Alcohol-Reducer for wines. It allows you to make wine lighter, healthier, with less alcohol and fewer calories while maintaining its flavor and aroma.
With cutting-edge patented technology, OPTIMUM allows you to explore a completely new and unique way of drinking wine, without complex setups or in-depth winemaker knowledge.
Choose a bottle of your favorite wine, uncork it and pour some of it in the appropriate container.
It is sufficient to set the percentage of alcohol to extract and press START.
In a few minutes OPTIMUM will extract the alcohol from the wine, with a totally natural method, and deposit it in the distillate container.

Red, White, Rosé, preferably still or slightly sparkling, semi-sweet, soft, dry, virtually all types of wines can be used in OPTIMUM.
Simple and intuitive, you don’t need to be an expert to use OPTIMUM.
It is based on a natural physical principle without using chemicals or additives of any kind.
The dealcoholization of wines carried out by OPTIMUM achieves excellent result.
WHY OPTIMUM?
OPTIMUM is designed for individuals who understand the importance of leading a healthy lifestyle by paying attention to their health and diet.
It is also ideal for those who enjoy trying new, unique, and personalized experiences.
Ethyl alcohol is crucial for the maturation of wine, but it is not necessary to consume it.
Up to 30% of the ethyl alcohol present in a bottle of wine can be removed before consumption without significantly altering the taste of the wine.
OPTIMUM allows you to select the amount of alcohol you wish to extract from the wine until it reaches less than 1% ABV.
In case of strong dealcoholization, a natural supplement can be used to restore the taste and flavor, changed due to the absence of alcohol.
HOW DOES IT WORK
OPTIMUM creates a vacuum in the WINE container and the heating probe brings the liquid to a temperature close to room temperature.
The microcontroller on the electronic board, regulates the distillation process, evaporating the ethyl alcohol mixed with water.
The vapor, after being cooled by the condenser, collects into the DISTILLATE container.
The distillation process does not involve the use of any chemical substances or additives.
To reduce -3% ABV in 8.45 Ounces (250 ml) of wine, it takes approximately 9 minutes at a room temperature of 77 °F (25 °C).
THE DEALCOHOLIZED WINE
With OPTIMUM it is preferable to use still wines of any type and brand, white, red, rosé, and reduce the alcohol content as much as you wish.
A reduction in alcohol of -3%..-4% ABV, corresponding to approximately 30% less ethyl alcohol, does not significantly modify the balance between acidity and sweetness of the dealcoholized wine and the aroma remains practically unchanged compared to the original wine.
A greater reduction in alcohol, above -5% ABV, alters the balance.
To compensate for the acidity notes, you can use natural products, such as dealcoholized sweet fortified wines or pasteurized honey, and explore, together with friends, the world of low-alcohol wine.
Acacia and Wildflower Honey are suitable for white and rosé wines, Chestnut and Clover Honey are ideal for red wines.
Wines dealcoholized with OPTIMUM tasted together with chocolate, offer an unforgettable taste experience.
Dark chocolate pairs well with medium-bodied and heavy-bodied red wines, while milk chocolate and white chocolate pair perfectly with delicate white and rosé wines.

Slightly Dealcoholized wine (-3%..-4% ABV) is ideal for wine lovers, it expresses the best of itself..
Medium Dealcoholized wine (-5%..-7% ABV) with a small quantity of pasteurized honey, a fresh way to toast, for all occasions and moments of the day.
Highly Dealcoholized wine (> -7% ABV) for low-alcohol aperitifs and cocktails with a unique taste, ideal for lovers of soft drinks. With tonic water and lime it is absolutely thirst-quenching.
After the extraction of the alcohol, it is advisable to let the dealcoholized wine rest for at least an half-hour at serving temperature before drinking it.
TASTING TESTS
After creating the first prototype in 2021, we collaborated with dozens of consumers and with some experts oenologists and sommeliers to taste various types of wines dealcoholized by OPTIMUM.
Their positive comments and criticisms served as inspiration to improve and refine the product.
We have achieved excellent results and are now ready to start production.
THE DISTILLATE
The distillate, the result of the dealcoholization of the wine done by OPTIMUM for personal use, contains a mixture of water, ethyl alcohol, and part of the aromas and typical components of the original wine.
In line with the healthy choice of reducing the alcohol content of wine, the distillate is not the objective of the dealcoholization carried out by OPTIMUM, therefore it must not be used and must be disposed of or eliminated.

HOW IT’S MADE
OPTIMUM has been very carefully designed to minimize agitation of the wine during alcohol extraction. To limit the loss of volatile aromas, a WINE container was used so as to dealcoholize only part of the contents of the bottle. Once dealcoholized, the wine can be reinserted into the original bottle to obtain the desired final alcohol content. This process is particularly effective for dealcoholizations up to -6% .. -7% ABV.

EXTRACTION TIME
The time for extracting alcohol from the wine depends on the alcohol percentage you want to reduce and on the quantity of wine to be treated.
For example, to reduce the alcohol content of a 750 ml bottle of wine by -3%, it takes 27 minutes.
The following table shows some examples.
The actual times will be slightly longer for pre-heating time which depends on the ambient temperature and the initial temperature of the wine.
But you don’t have to worry, OPTIMUM will take care of calculating the time.
You just need to set the amount of wine you want to process and the percentage of alcohol you want to extract.
Press the START button, OPTIMUM will do the rest.
From time to time you can choose whether to dealcoholize only a part or the entire contents of the bottle.
It is convenient to use a simple manual pump for vacuum corks (included in the package) to preserve unused wine for up to three or four weeks.
